Observation: Light fixture in the kitchen is missing a cover.
Corrective Action(s): Ensure all light fixtures have shatter resistant covers to prevent potential glass breakage in the kitchen. Light cover has been ordered.

Comments

-Walk-in cooler was at 3C.
-Upright cooler was at 4C.
-Prep cooler was at 4C.
-Upright freezer was at -18C.
-Cold holding unit temperatures checked and recorded twice daily.
-Soup in hot holding well was greater than 60C.
-Hot foods are cooked to greater than 74C prior to hot holding.
-Cooked foods properly cooled in the walk-in cooler. Breakfast sausages were less than 4C.
-Chemical dishwasher had a final rinse of 50ppm to 100ppm chlorine on the dish surface (minimum 50ppm required for proper sanitizing).
-Handwash station accessible and supplied with hot and cold running water, liquid hand soap, and single use paper towels. Staff observed practicing good single use glove practices.
-Quats sanitizer dispenser was at 200ppm. Sanitizer spray bottles labelled and tested at 200ppm.
-Ice machine was clean and well maintained. Ice scoop stored in a sanitary manner.
-General food storage practices good at the time of inspection. Foods stored off the floor and covered. Raw meats stored below ready-to-eat foods. Scoops stored in a sanitary manner.
-General sanitation good at the time of inspection.
-No signs of pests noted at the time of inspection.
-Staff FoodSafe Level 1 valid until May 03, 2023.
