-Time tracking required for pizza that is sold by the slice, as discussed. Note that this is also part of the establishment's Food Safety Plan. All coolers were < 4 C. All freezers were < -18 C. No evidence of pests, pest control comes onsite regularly. The dishwasher reached > 71 C at the plate level. Check daily. The glasswasher had 12.5 ppm Iodine. General sanitation was satisfactory.
