Comments

-Ensure that the dishwasher is tested every day and that logs are recorded.

Hand sinks were supplied with hot and cold water, soap and paper towels.
All coolers were < 4 C.
All freezers were < -18 C.
Food on the steam table was > 60 C.
The dishwasher had 100 ppm chlorine.
Quats sanitizer was measured at 200 ppm.
No evidence of pests, traps were in place.
General sanitation was satisfactory.
