Manager on site has a valid Food Safe training certificate.
Coolers are at the required 4C/40F or colder. Keep temperature records (check daily).
Hot holding - soup broth and curry sauces are at 60C / 140F or hotter. Discussed procedures for curry sauces.
Cooling of hot foods and reheating procedures reviewed.
Produce is washed on site in clean bowl/colander.
Freezers - good.
Hand sink - see above. Disposable gloves also used.
Chlorine 100-200ppm used to sanitize wiping cloths and food contact surfaces.
Commercial dishwasher has a final hot water sanitizing rinse (180F+ at hot water gauge and 160F+ reached inside of the machine - good).
Cleaning is good. See above re removing any unneeded items.
Public/staff washroom - has liquid soap and paper towels.
Pest control monitoring and program in place.
Additional cooking equipment to be installed. Fraser Health has no objections.
