- Hand sinks were properly supplied with hot and cold running water, liquid soap, and paper towels.
- Food-contact surface sanitizer available in sanitizing pails at 200 ppm (QUATS), with wiping cloths stored in solution - good.
- Triple-sink was properly set up for manual warewashing. 200 ppm (QUATS) detected in sanitizing sink compartment.
- Prep cooler and inserts were measured to be at 4C or colder. Discussed ensuring cold toppings in inserts are not filled all the way in order to ensure turnover is within 2 hours.
- Hot-held food items were measured to be at 60C or hotter.
- All other coolers in the back prep area were maintaining temperatures at 4C or colder.
- Upright freezer measured at -18C
- Food storage practices satisfactory. All food stored properly covered and labelled, with good separation between raw and ready-to-eat food items.
- Dry storage area satisfactory. All food stored off the floor.
- All equipment maintained in sanitary conditions
- General sanitation is excellent
- Pest control in place. No signs of pest activity noted
