Observation: Rodent droppings were observed in the following areas of the back area of the premises:
1. Corner and pallet where extra slicers are stored.
2. Below a wooden pallet with packaged food over top near the chest freezer.
3. A lower surface of a wooden shelf near the walk-in-cooler
4. Inside a walk-in-refrigeration unit that was not being used.

Note: Cleaning improvements were made to food storage areas, clearance was left behind pallets, and several rodent droppings observed during the previous inspection were removed.
Corrective Action(s): Please continue with pest control measures to assure the food premises remains free from rodent activity: Checking for signs of recent pest activity, cleaning affected areas with bleach water to remove the rodent droppings, sealing entry points, decluttering, implementing a pest control program, and protecting food from contamination (i.e. keeping it covered in enclosed food grade materials/packaging); Effective immediately.

Comments

Handsink was adequately supplied with liquid soap, hot and cold running water, and paper towels.
Walk-in-cooler in use and three display coolers in use were at or below 4 degrees C.
Chest freezer were at or below -18 degrees C.
100 ppm chlorine sanitizer was available in the bucket with wiping cloths.
Double compartment sink the front area and back area were accessible.
Walk-in-cooler that had buildup of debris inside it and leak inside it noted on the previous inspection report was not use at the time of inspection. Please clean it to remove the buildup and assure there is no leak inside it before using it again in the future.
