Observation: .
1) Automatic-feed beach solution at 50 ppm for manual dishwashing, 200+ ppm of bleach for sanitizer buckets.
2) Dirty bakery pans, display racks (plastic and metal for muffins and cookies) as well as the actual trolley rack, cup sleeves, and shelves.
Corrective Action(s): .
- Both manual dishwashing and sanitizer solution for cloths requires a chlorine concentration of 100 ppm in order to adequately disinfect. Dishware must be fully immersed in the bleach solution for a minimum of 2 minutes and cloths must be kept in the sanitizer buckets whenever they are not actually being used.
- all dishware must be thoroughly cleaned and sanitized before placing in cupboards, DO NOT place dirty dishware in cupboards.

Comments

All refrigerators and freezers meet requirements; hand sink does need to have proper paper towels, fitted for the dispenser, provided to prevent cross contamination of clean and dirty hands.

Updated Environmental Health Bulletins on boil water advisories, small fires and food safety during a power outage left for operators review and addition to the food safety and sanitation plans.
