Observation (CORRECTED DURING INSPECTION): One bottle of sanitizer located near the dishwashing area was measured at a concentration of 0 to 100 ppm quaternary ammonium compounds (quats).
Corrective Action(s): Sanitizer bottle was emptied and refilled at the dispenser. Sanitizer was re-tested and measured at 200 ppm quats. Ensure that sanitizer is maintained at concentrations required for effective sanitizing of food contact surfaces (e.g. 200 ppm quats). Quats test strips are available on site.

Routine inspection conducted:

Main Kitchen:
- Walk in cooler at 3 degrees C. Food is covered and stored off the floor. Raw animal proteins and ready-to-eat foods are properly organized. Foods appear to be cooled properly and internal temperature of cooled food items measured 4 degrees C or less. A cooling rack is available.
- Reach in cooler at 4 degrees C
- Walk in freezer at -18 degrees C
- Hot holding internal food temperatures at greater than 60 degrees C
- Thermometers accurate to 1 degree C are available for cold holding units. Probe thermometers available for internal food temperatures.
- Hand washing stations are unobstructed and supplied with hot and cold running water, liquid hand soap, and single use paper towels.
- Non-latex gloves available
- Low temperature dishwasher measured at 65 degrees C and 100 ppm chlorine at the utensil surface.
- Three sink plugs available at manual ware washing sinks.
- Dishwashing and temperature logs are maintained on site.
- Utensils and equipment are maintained in sanitary condition
- Quaternary ammonium compounds (quats) sanitizer is available in labeled spray bottles at 200 ppm (exception: refer to code 302 *corrected*)
