Corrective Action(s): Immediately. Label all containers and store it in a safe manner. Ensure that all chemicals cleaning agents stored in the original containers or properly labeled.

- Prep cooler (bottom): 3.2 C; top at 4 C.
- Walk in cooler: 3 C.
- Walk in freezer - satisfactory.
- Low temp dishwasher achieved 100 ppm for chlorine residual on rinse cycle (and 42 C).
- Surface sanitizer - available and meat requirements (Smart Power at 5.86/info from ECO Lab available/test strips - available).
- No signs of pests.
- Foods in cold holding units are covered.
- Storage - organized and off the floor.
- Fan hood - clean.
