Observation (CORRECTED DURING INSPECTION): Display cooler holding cold condiments, sausages and taquitos were noted over 4C during the inspection.
Sausages were at 8.7C, taquitos were at 6.9C and 7.4C, salsa noted at 9.2C.
**Issues corrected at the time of inspection** All cold potentially hazardous food stored in this unit was discarded. Unable to determine how long food has been stored in this unit as the temperature log for this unit has been pre-filled out for the entire day. 9 condiment containers (chopped onion x 2, salsa x 3, wine saucerkraut x 3, jalapeno x 1), 1 opened bag of sausages, 2 unopened bags of taquitos and 3 opened bags of taquitos were discarded.
Corrective Action(s): Please fill out the temperarture log only at the prescribed times going forward, do not fill out the temperature log in advance. If the temperature log was filled out correctly, the cold potentially hazardous food might not need to be discarded and could have been transferred to another refrigeration units instead.
Monitor all refrigeration units and if temperature is reading over 4C, do not use and call in the unit for servicing. Any cold potentially hazardous food items stored in a refrigeration unit that cannot be maintained at 4C or less must be discarded or moved to another functioning refrigeration unit.

Observation: Display cooler holding cold condiments, sausages and taquitos had an ambient temperature reading of 10.2C and 9.9C when readings were taken with a calibrated thermometer twice during the inspection.

Routine inspection conducted today:
Handwash stations accessible, equipped with hot and cold running water, liquid soap and paper towel.
QUAT based sanitizer (Measure Up 10) available in spray bottles - 200 PPM QUAT detected.
3-compartment sink used for manual dishwashing - drain plugs available.
Refrigeration units (except for unit holding condiments, sausages and taquitos) were ≤ 4C.
Freezer units were ≤ -18C.
Hot hold units were holding food at ≥ 60C.
Refrigeration and freezer units were equipped with thermometers.
Equipment and utensils were noted in sanitary conditions.
No signs of pest activities noted at the time of inspection.
Manager and staff on-site FOODSAFE level 1 equivalent certificates verified.
