Observation (CORRECTED DURING INSPECTION): Chicken breast were cooling in a container 4 to 6 inches deep and was probed at 50C. Chicken was made less than 2 hours ago.
Corrective Action(s): Hot potentially hazardous foods must be cooled from 60C to 20C in 2 hours or less and from 20C to 4C in 4 hours or less to prevent the growth of pathogens and or the formation of toxins. This can be accomplished by cooling chicken on a cooking sheet in single layers. Chicken was placed on a cooking sheet at the time of inspection for cooling.

Corrective Action(s): Do not store food items on the floor to protect foods from potential contamination. Items were relocated at the time of inspection.

Comments

-Follow-up inspection to Sept 8, 2016.
-Chemical dishwasher had a final rinse of 50ppm chlorine on the dish surface at the time of inspection (minimum 50ppm chlorine required for proper sanitizing).
-3-compartment sink was also set up for manual warewashing with 100ppm chlorine sanitizer.
-Food items were properly stored in food grade materials at the time of inspection (no chicken and detergent containers).
-Did not observe foods stored in opened cans at the time of inspection.
-Did not observe frozen foods thawing at room temperature at the time of inspection.
-Newspaper has been removed from shelving units.
