Observation: Final rinse of high temperature dishwasher was below 71 degrees Celsius.
Corrective Action(s): The high temperature dishwasher's final rinse temperature was less than 71 degrees Celsius at the surface of the utensil (as per thermal label) following multiple attempts to ascertain the temperature. Final rinse temperature must be at least 71 degrees Celsius or more at the surface of the utensil in order to attain adequate sanitizing of utensils. The dishwasher shall be serviced/repaired to ensure it is capable of adequately sanitizing utensils.

Observation: Mice droppings found throughout the food preparation and food storage areas.
Corrective Action(s): Clean up all mouse droppings and sanitize all affected areas with bleach and water solution. All damaged food and food containers shall be discarded. Operator said the premise is serviced by Care Pest but could not provide pest control reports for review. Glue boards are being used throughout the kitchen to control mice.

Observation: 1. Rubber seals and the door-shelves of the refrigerator near the grill are damaged.
2. Faucet for kitchen hand sink is loose.
Corrective Action(s): 1. The damaged door seals and shelves are preventing the door from closing properly. Temperature in the refrigerator was 8-10 degrees Celsius. Instructed staff to transfer all foods to other coolers. Repair the door seals and shelves to allow for the door to close properly and maintain a temperature of 4 degrees Celsius or less in the refrigerator. Do not use this refrigerator until it is repaired. Premises cold storage capacity is more than adequate without this refrigerator.

Freezers were less than -18 degrees Celsius.
Hot holding units were over 60 degrees Celsius.
Hand sinks stocked with liquid soap and paper towels.
All sinks equipped with hot and cold running water.
Bleach sanitizer for in-use wiping cloths and spray bottles: 200ppm



Closure order issued for violation codes 303 and 304 noted above. Premise shall close immediately and remain closed until closure order has been rescinded by Fraser Health.
