Observation (CORRECTED DURING INSPECTION): A rock was found being used to weigh down food in a brine solution. Two other rocks were observed in the facility.
Corrective Action(s): Rocks are not considered food grade materials and cannot be properly cleaned and sanitized. Immediately discontinue use of rocks to contact foods. Rocks were removed from the facility at the time of inspection and food was discarded at the time of inspection.

Comments

-Follow-up inspection to October 31, 2018.
-Handwash station accessible and supplied with hot and cold running water, liquid hand soap, and single use paper towels.
-Did not observe hand hygiene issues at the time of inspection. Staff are changing gloves, when gloves become potentially contamination.
-Equipment was found to be clean and sanitary at the time of inspection. Ensure all equipment is cleaned and sanitized after each use, or every 4 hours when used continuously.
-Front cooler has been replaced and new cooler unit was at 4C.
-Front freezer unit has been replaced. Alternate upright freezer was at -10C.
-Foods were properly stored off the floor at the time of inspection.
-Did not observed foods improperly double stacked at the time of inspection. Raw meats were stored below ready-to-eat foods.
-Did not observed foods drying or in contact with a burlap bag at the time of inspection.
-Did not observe any foods thawing at room temperature at the time of inspection.
-Health Permit hand delivered to facility. Health Permit is to be posted in a visible location. Facility must adhere to the Food Premies Regulation, otherwise permit can be revoked or terms and conditions may be added to the permit.
