Observation (CORRECTED DURING INSPECTION): Undercounter storage cooler not properly cold holding. Internal PHF's probed at 10 to 11c. All PHF's discarded.
Top side of pizza prep cooler containers filled too high. Cooler only cools from the bottom and sides.
Corrective Action(s): Staff were recording in daily log that cooler was above 4c for approx 2 weeks. Management was not notified that cooler was not properly cold holding. Ensure staff are properly trained to immediatly notify Management and to take immediate corrective action ie discading temperature abused PHF's.
Do not fill containers past the fill line on each container (About 2 inches from the top)
Do not place individual wrapped saran wrapped chicken inside the top storage containers as saran wrap insulates each bag. Store in bottom portion of pizza prep cooler

Observation (CORRECTED DURING INSPECTION): Knives observed jammed in counter that is inaccessible for cleaning. Knives were visibly soiled with food debris affixed to the blades.
Corrective Action(s): Knives must be stored in a container when propely cleaned and sanitized. When soiled these are to be properly warewashed then put back into the clean container.

Dishwasher barely reaching 115F. Same dishwasher in Billy Miner reaching 135F. Minimum on manufactures plate in 120F

Repair dishwasher so that it is reaching a minimum of 120F
