Manager on-site provided hard copy of food safety plan for hot wings which matches what she had said previously: frozen pre-breaded wings are fried for 6.5 minutes in deep fryer and temperature is checked to achieved minimum 185 deg F after cooking.

Hot holding unit for cooked chicken has minimum hold temperature of 145 deg F per the food safety plan, but operator ensures minimum of 165 deg F - good
