Observation (CORRECTED DURING INSPECTION): Potentially hazardous foods (deli meats and cut vegetables) stored above 4 C in two door undercounter cooler. Ambient Air temperature of cooler at 10.6 C. Ham at 9.4 C, turkey breast at 8.5 C, chicken at 9.1 C,roast beef at 10 C, cut vegetables at 8.
Corrective Action(s): All potentially hazardous foods were discarded (had been in cooler since last night). Wraps that were prepared less than 1 hour ago were transferred to another cooler.

Observation (CORRECTED DURING INSPECTION): Handwashing sink in back not stocked with liquid soap in a dispenser.
Corrective Action(s): Handwashing sinks must be equipped with hot/cold running water, liquid soap and single-use paper towels.

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation: Build-up of grease and debris behind oven, debris behind prep tables in back and dust build up on fans in walk-in cooler.
Corrective Action(s): Clean all surfaces behind and underneath equipment so everything is visibly clean. Correct by August 28, 2023.

308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
Observation: 1) Two door undercounter cooler used to store deli meats for sandwiches registered at 10.6 C. Rubber seal (gasket) is falling off.
2) Sugar and rice bin lids are broken. Broken piece from lid found on floor - this could have easily fallen into the food.
Corrective Action(s): 1) Repair cooler so that it is able to maintain a temperature of 4 C or below.
Do not use cooler for potentially hazardous food until it is at 4 C or below.
Correct immediately.
2) Do not use broken equipment/utensils for food storage. Transfer food into another bin or container. Staff stated they would do this immediately.

Routine Inspection

General Comments:
-All coolers (except meat cooler) at 4 C or below.
-Walk-in freezer at-18 C or below.
-Standing freezer at -18 C or below.
-Soup hot held at ≥ 60 C.
-Rotisserie chicken hot held at ≥ 60 C.
-Quats sanitizer in spray bottles registered at 200 ppm.
-3 compartment sink set up for manually warewashng - quats registered at 200 ppm.
*Dishwasher not in use/not working - highly recommend repairing dishwasher. If there are no plans to replace it, remove it it off the premises. Items not required should be removed.
*Note: Cooking trays were still greasy after being washed manually using the 3 compartment sink.
Consider changing detergent or repairing and using the dishwasher.
All utensils/pots/pans must be clean they are sanitized otherwise the sanitizer is not effective.

Reminder: Thermometers are to be sanitized before they are probed in food to prevent cross contamination.
