All coolers operating at </= 4C; freezers at </= -18C; hot-holding at >/= 60C *Please ensure that the food inserts are monitored closely - only fill the inserts with as much food as will be used in 2 hours
Sanitizer spray bottle solution measured > 200 ppm (this is too high). Reduced it to the correct concentration: 100 ppm. Too much bleach can cause chemical contamination. To mix properly, use 1/2 teaspoon bleach in 1 L of water *Label this bottle "BLEACH" as required
Handsinks equipped with hot and cold running water, liquid soap and paper towel
General sanitation is good

3-compartment sink for ware washing. *Please ensure that each sink has a plug. The correct procedure for washing dishes is as follows: 1. Wash with warm, soapy water 2. Rinse with water 3. Soak in sanitizer (100 ppm bleach solution) 4. Air dry ***Food equipment/utensils must have the sanitizer residual - this is the component that kills germs - it must not be washed off
