Observation (CORRECTED DURING INSPECTION): Container of custard observed at 50.2C in walk in cooler. The food product is in the danger zone due to improper cooling and may result in bacteria/pathogen growth.
Corrective Action(s): Ensure hot foods are cooled from 60C to 20C within two hours outside of the fridge using techniques such as ice wands or ice bath then place in the cooler to cool from 20C to 4C and below within 4 hours.

Washrooms are sanitary with fully stocked hand sinks.
Food protected from contamination. Food is from an approved source.
Equipment in good working order.

Temperature holding is adequate and in use with accurate thermometers and logs.
