Observation (CORRECTED DURING INSPECTION): The Quats sanitizer in cloth buckets had a strength 50ppm. This is too low to kill bacteria and pathrogens.
Corrective Action(s): Immediately replace the sanitizer with new solution. Train staff that the sanitizer shall be changed at least every 2 hours or sooner. Use the Quats test strips to determine if the sanitizer solution is strong enough or not (must be at least 200ppm). During the inspection, new sanitizer solution was replaced in the cloth buckets.

Observation: The manager has an expired FoodSafe Level 1 certificate. As per health regulations, the manager/owner requires to possess a valid FoodSafe Level 1 certificate, or equivalent certificate.
Corrective Action(s): Enroll into the next available course and obtain a FoodSafe Level 1 certificate or equivalent course.

Comments

A routine inspection was completed, the following observations were made:
- Coolers 4C or colder; freezers -20C or colder; thermometers present; and temps recorded daily.
- High temperature dishwasher had a rinse cycle temperature of 81.6C at the plate's surface, as per max/min thermometer.
- Hand sinks stocked with liquid soap, paper towels, and running hot and cold water.
- Quats sanitizer in spray bottles and cloth buckets had a strenght fo 200ppm. Test strips present. Ensure the sanitizer solution in spray bottles are changed every 2 days or sooner, and the solution is cloth buckets is changed every 2 hours or sooner.
- All foods stored in food grade containers; covered; date coded; labeled; foods stored in groups; and foods stored 6" off the floor on shelves and racks.
- No expired foods in use or for sale. FIFO rules being followed.
- General sanitation level is good. A few flies observed, notify your professional pest company to help eliminate them. Try to keep the drive-thru window closed as much as possible to prevent the entry of flies. You may wish to install a air curtain above the entry doors and drive-thru window to prevent the entry of flies.
- Surfaces, equipment, and food storage & preparation areas are in good working order.
