Observation (CORRECTED DURING INSPECTION): High-temperature dishwasher is observed in use and is not able to maintain a minimum final rinse temperature of 71'C for sanitizing purposes. Single-use cutlery and dishware observed in use for serving to patrons. High-temperature dishwasher is used to sanitize all kitchen equipment.
Corrective Action(s): Re-clean and sanitize all dishware, utensils and equipment using the 3-compartment manual warewashing method. The following procedures must be used for manual warewashing:
1. Scrape clean any gross debris and food residue
2. Wash in the first compartment sink in detergent solution (water temperature must be at least 43'C)
3. Rinse in the second compartment sink in clean potable water (water temperature must be at least 45'C)
4. Sanitize in the third compartment sink by immersion for at least 30 seconds in a solution containing QUATs having a strength of not higher than 200 ppm, in water temperature at least 45'C.
5. All equipment must be AIR DRIED only
Continue to use this method to clean and sanitize all kitchen equipment and to serve all food in single-usep plates, cups and utensils for serving to patrons until the dishwasher has been verified to be functioning adequately by the health inspector.

Observation: High-temperature dishwasher not able to reach minimum final rinse temperature of 71'C at plate surface after running the dishwasher multiple times. Dishwasher measured at maximum temperature of 54'C at plate surface.
Corrective Action(s): Repair the dishwasher immediately to ensure it is able to reach a minimum final rinse temperature of 71'C. Do not use the high-temperature dishwasher for sanitizing dishware/equipment until it is verified functioning by the health inspector. The dishwasher may ONLY be used for washing and rinsing, so long as the dishwasher is able to maintain a minimum temperature of 45'C and dishwashing detetegent is available and dispensed. Failure to comply may lead to progressive enforcement.

- All food observed at least 6 inches off the floor and covered
- Raw meat observed stored away from ready-to-eat foods
- First-in-first-out method observed in use
- General sanitation is good during inspection (except violation)
- Hand washing stations are unobstructed and supplied with hot and cold running water, liquid soap and paper towel
- 3-compartment sink available with drain plugs and QUATs sanitizer
- QUATs sanitizer in spray bottle (X1) measured at 200 ppm QUATs concentration
- Ice machine and deli slicer observed in good sanitary condition
- No signs of pests during inspection
- Professional pest control company is contracted
- FOODSAFE Level 1 trained staff available on site

*Reminder:
- High-temperature dishwasher MUST be monitored daily and verified functioning. If the dishwasher is not functioning, it must be repaired immediately and the 3-compartment sink must be used to manual warewash all equipment until the dishwasher is repaired.
