Observation (CORRECTED DURING INSPECTION): *Repeat Violation* <200 ppm QUATs concentration detected in the three-compartment sink at the start of the inspection. Staff member indicated the solution was diluted since the chemical was irritating their hands.
Corrective Action(s): - Staff refilled the sanitizer solution in the three compartment sink and 200 ppm QUAT concentration was detected.
- Instructed staff that if the sanitizer is causing irritation, then a different staff member should be in charge of the dishwashing. Refer manufacturers label for minimum concentration to sanitize food contact surfaces, utensils and equipment to get rid of harmful bacteria and germs.
- Operator to ensure that concentration of sanitizer follows the manufacturers instructions
