Routine inspection conducted and the following were noted:

- All coolers were less than or equal to 4C and equipped with thermometers.
- Quats sanitizer available from dispenser and in sanitizing buckets at 200 ppm. Test strips on site.
- Hand washing stations supplied with hot and cold running water, liquid hand soap, and single use paper towels.
- Separate band saw used for cutting raw beef and pork products. Band saw is not used for cutting any lamb products.
- Slicer is used for raw pork and beef products.
- Discussed washing and sanitizing procedures with department head. Equipped needs to be fully dismantled and thoroughly washed and sanitized at least every 4 hours if continuously used.
