Discussed the following with the new operator:
soaking cloths in sanitizer - change sanitizer every 2 hours
washing and sanitizing in-use utensils every 4 hours
requirement to submit plans to Fraser Health for equipment changes in kitchen (e.g. new dishwasher), renovations, etc.
how to mix up 100 ppm bleach sanitizer (1/2 teaspoon bleach in 1 L of water)
requirement to obtain Quats test strips and to check sanitizer concentration daily

Routine inspection:
Handsinks equipped with hot and cold running water, liquid soap and paper towel
Quats sanitizer at 200 ppm
Bleach available for sanitizing - at 100 ppm
Coolers operating at </= 4C; freezers operating at </= -18C; temperatures recorded daily
No signs of pests observed
Facility is in good sanitary condition
FoodSafe certified staff present
Foods stored 6" off the ground
