Observation: * Several food items and food equipment found in storage areas(eg. coolers, etc) not covered or protected from contamination (eg. bar area stirring sticks stored with bottle openers, etc). Food stuff and food equipment must be protected from contamination to reduce risk of cross contamination
Corrective Action(s): * Ensure all food/food equipment stored properly and protected from contamination or cross contamination issues

Observation: * Food equipment and areas under some prep/cooking stations have build up of grime/debris that require immediate cleaning attention and more frequent monitoring/scheduling to maintain sanitary conditions(also under ice machine area too). Baseboards under cooking line areas, etc., require cleaning and regular maintenance too in some areas
Corrective Action(s): * Ensure all areas in kitchen and bar are properly cleaned and maintained regularly/scheduled to minimize build up of grime/debris and maintain sanitary conditions

Comments

* Dishwasher in kitchen had final rinse of 50 ppm chlorine residual at plate surface internally
* Glass washer had final rinse of 12.5 ppm iodine residual at glass surface internally
* Cold-holding units were found to be at 4'C/40'F or colder overall; monitor areas where staff are in and out frequently to ensure proper temperatures maintained
* Freezer units were -18'C or colder; monitor areas where staff are in and out frequently to ensure proper temperature maintained
* Sanitizer was available and at 200 ppm quaternary ammonium concentration in buckets to store wiping rags
* Note: ensure ALL food stuff covered in storage areas; if cooling food down food still to be covered in storage using food grade covers (eg. paper towels/parchment paper, etc)
* Staff were dressed appropriately while handling food
* Note: cleaning improvements noted since last inspection however, some cleaning to be done in some areas to remove build up of grime/debris found and on more regular basis
