Observation (CORRECTED DURING INSPECTION): Glasses run through the glasswasher were not being properly sanitized.
Corrective Action(s): Operator to use the dishwasher until it is repaired/ replaced.

304 - Premises not free of pests [s. 26(a)]
Observation: A large number of mouse droppings was found underneath a plumbing access point in the wall under the 4-compartment sink and under the dishwasher. Droppings were not found anywhere else in the kitchen. Pest control is onsite twice per month, report reviewed during the inspection.
Corrective Action(s): Have a professional pest control company come onsite, and provide the report to Fraser Health afterwards. Seal all entry points, including ones in hard to reach areas (behind and underneath equipment). Clean all droppings with a bleach solution. Follow up in two weeks.

Observation: Grease buildup underneath the cook line. The cook indicated that it is cleaned every Thursday.
Corrective Action(s): Clean as soon as possible.

Observation: Glasswasher is not working properly. Operator stated that he will replace it within two weeks.

Observation: Exposed wood observed next to the glasswasher.
Corrective Action(s): Seal so that it is smooth, impermeable and easy to clean within one month.

Comments

-Do not use pool test strips to check the chlorine levels for the dishwasher and glasswasher since they cannot check the required range of 50-100 ppm. Purchase chlorine test strips that have a range of 0ppm- 200 ppm within two weeks.
-Main cook has FoodSafe level 1 from another Province and is registered for the June course.

Hand sinks were supplied with hot and cold water, soap and paper towels.
All coolers were < 4 C.
The walk-in cooler was organized.
The ice machine was clean.
All freezers were < -18 C.
The dishwasher had 100 ppm chlorine. Check daily.
Quats sanitizer was at 200 ppm.
Food is stored in sealed, pest proof containers.
General sanitation was satisfactory.
