Not below prep tables. Wiping cloth storage: As discussed. Spray bottles are be labelled. Food Storage: Use of ice discussed. Monitor limit quantity of PHF's stored on ice (ie <24 hrs.) Provide shelving to keep items off of floor. Food safe trained staff on site. Corporate FSP, SP on site. Sanitation: Facility is to be kept clean and organized at all times (ie grease build up below fryers)
