Observation (CORRECTED DURING INSPECTION): Quats sanitizer spray bottle had no detectable sanitizer concentration. Sanitizer dispenser was empty.
Corrective Action(s): Quats sanitizer must be maintained at 200ppm in order to properly sanitize food contact surfaces. Operator prepared bleach sanitizer at 100ppm at the time of inspection.

Observation: Rodent droppings were found in the warehouse area.
Corrective Action(s): Ensure all areas affected with rodent droppings are cleaned and sanitized using a 1:10 bleach solution. Monitor for further pest activity and contact you professional pest control operator as needed.

Observation: Quats sanitizer dispenser had no concentrate left in the dispenser.
Corrective Action(s): Contact chemical supplier to refill chemical concentrate and ensure Quats sanitizer is dispensed at 200ppm.

Observation: Unlabelled spray bottle in the production area had unknown contents.
Corrective Action(s): Ensure all chemicals bottles are properly labelled to prevent accidental mixing and/or misuse of chemicals. Empty unknown contents and wash bottle thoroughly prior to using for storage of chemicals.

Comments

-Warehouse walk-in coolers were at or below 4C.
-Warehouse and cutting area freezer units ranged from -10C to -20C.
-Sausage walk-in cooler was at 4C.
-Front display coolers were at 4C.
-Customer area cooler was at 3C.
-Customer area freezer was at -10C (defrost cycle).
-Handwash stations accessible and supplied with hot and cold running water, liquid hand soap, and single use paper towels.
-Meat grinder disassembled for cleaning and sanitizing twice a day.
-Meat saw sanitizer at least every 2 hours.
-Foods stored off the ground and protected from potential contamination.
-Canned foods were in good condition and a random selection of canned items were within their best before dates.
-General sanitation good at the time of inspection.
-Facility serviced by a professional pest control operator. Last inspection was conducted as a result of staff observing a dead rodent in the lunch room.
-Washroom clean and sanitary.
*Facility cuts meat for the public (private source of meat) at the end of the day, prior to cleaning and sanitizing equipment. Meat from outside sources can only be cut at the end of the day.
