Observation (CORRECTED DURING INSPECTION): Sanitizer for food contact surfaces was not available at the time of inspection. Ostra (Quat-based) is normally used.
Corrective Action(s): Prepare 100-200 ppm bleach sanitizer to use until more Ostro can be obtained. This can be prepared by mixing 1/2 teaspoon (1/2 cap) of household bleach per 1L water.

- Dry storage areas are maintained
- No signs of pests observed
- Permit is posted

Note:
- Reviewed washing procedures for large pots. They are unable to fit in the dishwashing sinks so the pots are filled with boiling water to loosen food debris before scraping off. Once visually clean, ensure the pots are sprayed down with food contact surface sanitizer. Provided manual dishwashing sign.
- Remove equipment that is not required for the business.
