209 - Food not protected from contamination [s. 12(a)]
Observation: 1. In the storage room, some boxes containing food products were observed on floor and two food storage bins were not covered.
2. In walk-in freezer, a loaf of bread was found on floor which was voluntarily discarded by the staff during inspection.
Corrective Action(s): To prevent the risk of food contamination, ensure that the food products are stored in pest proof storage bins with lids on & at least 6" off the floor.

Observation: 1. Food debris was observed under the shelves and near storage bins in storage room.
2. Mould build-up noted on the walls & ceiling of walk-in cooler.
Corrective Action(s): 1. Ensure that the facility is maintained in sanitary condition. Clean under the shelves, corners and hard to reach areas regularly to prevent build up of dirt/food debris that could potentially attract rodents.
2. Clean the walls & ceiling of walk-in cooler to remove mould & use bleach solution (~200ppm) to control its growth in future.

Comments

Routine inspection conducted at the food facility and the following observations were made during the inspection:

Temperature (coolers to be at 4C or less, freezers at -18C or less):
- Coolers were measured at 4C or less.
- Freezers at -18C or less.
- Temperature logs were maintained and found up-to-date.

Storage:
- All food products were found either in original packaging or covered inside coolers/freezers.
- Chemicals and cleaners were stored away from food preparation areas.

Sanitation & Maintenance:
- Hand wash station was adequately stocked with hot/cold running water, liquid soap, and single-use paper towels.
- Sanitizer spray bottle available and the concentration of QUATS noted at 200ppm.
- Sanitizer dispenser releases 200 ppm QUATS at 3-compartment sink.
- High temp mechanical dishwasher reached 71C at dish surface during rinse cycle.
- Meat slicer was found in good sanitary condition.
- No grease/dirt build-up observed on vents.
- Self-serve area was found clean. Staff stated that coffee machines are washed & sanitized daily.

Pest Management:
- No visible signs of pest activity observed at the time of inspection.
- Back door was repaired and no gap noted during inspection.

Administrative:
- Operating permit was present.
- Staff has valid FoodSafe Level 1 certificate.

Note:
- Do not use hydrogen peroxide as a sanitizer for food contact surfaces.
- Resources on "mould" emailed to the operator.
