A routine inspection was completed due to completion of renovations:
- Premises built as per approved floor plan.
- Line cooler 3C; raw meat cooler 2C; u/c drink cooler 4C; walk-in-cooler 2C; upright freezers -21C; u/c freezers -20C; walk-in-freezer -24C; hot holding unit above 60C; thermometers present in all cooler, freezer, and hot holding units; and temperatures recorded daily.
- Hand sinks stocked with liquid soap, paper towels and running hot and cold water.
- Low temperature dishwasher had a [Cl2] between 100-200ppm during the rinse cycle. This is a bit high, the concentration should be between 50-100ppm. Test strips present.
- Low temperature dishwasher had wash cycle temp of 120F and rinse cycle temp of 130F. This meets the manufacturer's specifications. Good.
- Quats sanitizer in spray bottles and cloth buckets had concentration of 200ppm. Test strips present.
- All surfaces are durable, smooth, level, sealed and cleanable.
- Holes in walls in walk-in-cooler and walk-in-freezer will be plugged with rubber stoppers. These holes were needed to install the walls.
- General sanitation level is good. No signs of pests.
- All items stored 6" off the floor on racks and shelves.
- No foods present at time of inspection.
- Staff possess recognized, and equivalent FoodSafe certificates.
- Valid health permit and decal posted.
- Approval to open, on condition that all ACTION items are completed prior to opening.
ACTION
Lower the [Cl2] of the dishwasher so it is maintained between 50-100ppm.
Block the hole in the wall, behind the hot water tank.
Install a door guard/sweep on the bottom of the door leading into the electrical room.
Install door guards/sweeps on the bottom of all exterior doors.
Seal the top and bottom of the baseboard going along the exterior perimeter of the walk-in-cooler/freezer unit.
Seal the space between the floor and the mop sink.
Seal any openings or spaces around pipes or drains going into walls, with expanding foam or steel mesh (1/4" or smaller).
Seal any cracks or openings in tile baseboards, especially those around corners. |
