Observation (CORRECTED DURING INSPECTION): The food in the pizza assembly cooler was 10C, this is too warm and bacteria will multiply. Patrons could become ill eating the food.
Corrective Action(s): Immediately relocate all non-perishable pizza toppings into a cooler that maintains food at 4C or colder. Discard all perishable items (RTE meats & cheese). Do not use the cooler until it can keep food at 4C at all times. During the inspection, the owner discarded perishable foods and relocated non-perishable foods to a working cooler.

103 - Failure to hold a valid permit while operating a food service establishment [s. 8(1)]
Observation (CORRECTED DURING INSPECTION): Premises does not hold a valid health permit and decal, as the yearly health permit fees ($150) have not been paid. These fees were required to be paid in April 2023.
Corrective Action(s): Immediately pay the outstanding fees. Failure to do so, will result in the closure of the premises until full payment is received. During the inspection, owner provided $150 cash to pay for the permit fees.

305 - Conditions observed that may allow entrance/harbouring/breeding of pests [s. 26(b),(c)]
Observation (CORRECTED DURING INSPECTION): The front and back door were propped open during the inspection. Pests (flies and rodents) can enter.
Corrective Action(s): Immediately close the front and back door. Install a screen door on the front and back door to prevent the entry of pests. Until this is installed, the doors must remain closed at all times. Doors MUST be closed at dusk every day as rodents become active during this time. During the inspection, owner shut the doors.

307 - Equipment/utensils/food contact surfaces are not of suitable design/material [s. 16; s. 19]
Observation: 1) A new wooden shelf found by the pizza oven. The shelf is raw wood and not sealed, therefore it is not cleanable and will attract pests.
2) The floor around the grease intercept has trough that catches food debris and makes it difficult to easily clean. This will attract pests. This was mentioned in the previous inspection, and this was required to be completed PRIOR to operation.
3) Plastic, corrugated sheets are being used to cover pizza pans. These covers are not made of food grade plastic and not cleanable. This was mentioned in the previous inspection, and this was required to be addressed PRIOR to operation.
Corrective Action(s): 1) Paint and seal the wood shelf, so it is sealed and cleanable. Use a light colored paint so staff can see when it is dirty.

2) Fill in the trough so the floor is level, durable, smooth, sealed and cleanable. Failure to complete this will result in the issuance of tickets and/or fines.

3) Discard the plastic, corrugated covers and purchase food grade plastic or stainless steel covers to cover the pizza dough. Failure to complete this will result in the issuance of tickets and/or fines.

308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
Observation: The pizza assembly cooler is able to maintain food at 4C at all times. This is unsafe as bacteria can grow in food at warm temperatures. Patron eating the food could become ill.
Corrective Action(s): Immediately call a company to repair the pizza assembly cooler so it can maintain food at 4C at all times. Do NOT store any food in the cooler until it is fixed.

311 - Premises not maintained as per approved plans [s. 6(1)(b)]
Observation: Owner has installed an electric, table top 2-burner to cook items and a table-top deep fryer. These items were not on the approved floor plan, and they are not found under an appropriate exhaust hood canopy. This is a fire hazard and does not meet Building and Fire Codes.
Corrective Action(s): Immediately stop using the equipment and remove it from the premises. Prior to installing and using any equipment, approval from the City and our office (Health Dept.) requires to be obtained.

312 - Items not required for food premises operation being stored on the premises [s. 18]
Observation: There is a large amount of items (extra equipment & food containers; TVs, decor, etc.) that have been brought into the premises that do not require to be here, as they are not used on a daily basis to run the premises. This is creating clutter and it is difficult to clean the premises thoroughly.
Corrective Action(s): All itmes that are not being used to run the business on a daily basis MUST be sold, removed, and/or stored somewhere else. Failure to do this, will result in the issuance of tickets and/or fines.

Comments

A routine inspection was completed:
- Coolers 4C or colder (other than the pizza assembly cooler); freezers -22C; hot holding unit above 60C; and thermometers present.
- Hand sink stocked with liquid soap, paper towels, and running hot and cold water.
- Bleach sanitizer in bucket and spray bottle had [Cl2] of 200ppm.
- All foods stored in food grade containers; covered; date coded; foods stored in groups to prevent cross contamination; and foods stored 6" off the floor on shelves or racks.
- No expired foods in use or for sale. FIFO rules being followed.
- Valid, FoodSafe certified staff present.
- General sanitation level is adequate. More attention needed in hard-to-reach areas (under and behind sinks, prep tables, and equipment), and more attention to detailed cleaning (removing all items off shelving and cleaning the shelves).
- Old mice droppings found, clean these up and sanitize the area with bleach and hot water.
- Owner provided $150 (cash) to pay for the outstanding permit fees.

**Follow-up inspection to occur next week (July 11/23) to ensure the pizza assembly cooler and screen doors have been installed**
