Observation (CORRECTED DURING INSPECTION): Reusable plates, cups, and cutlery were being manually washed but were not being sanitized.
Corrective Action(s): For proper manual dishwashing, dishes must be washed, rinsed, then SANITIZED with a food-contact surface sanitizer.
Use your QUAT-based sanitizer (SIGNET Hard Surface Sanitizer) from your dispenser in the laundry room, undiluted, for sanitizing dishes in your three-compartment sink. No rinse step is required after fully submerging dishware in sanitizer for at least 30 seconds. Ensure to change the sanitizer solution in your sink after use.
Alternatively, single-use disposable plates, cups, and cutlery may be used until the dishwasher is repaired.

Observation: Facility kitchen has not been in use. Food is being delivered daily from The Lunch Lady, and served for lunch. Snacks for the next morning are being held in the refrigerator. No cooking is currently being done onsite.
Corrective Action(s): Submit an updated Food Safety Plan for this change in operation.

Observation: High-temperature dishwasher is broken.
Corrective Action(s): Operator has contacted a technician for servicing, waiting for a part. Dishware to be manually washed, rinsed, and sanitized in the meantime, OR use single-use disposable plates, cups, and cutlery.
Please contact the health inspector once the dishwasher has been repaired.

- Cooler measured less than 4C.
- Freezer measured less than -18C.
- General sanitation satisfactory.
- Regular pest control servicing in place. No signs of pest activity in kitchen noted at time of inspection.
- As noted in violation code 212 above, ensure to submit an updated Food Safety Plan.
