Observation (CORRECTED DURING INSPECTION):
Observation #1: Repeat violation: Low-temperature dishwasher had 0 ppm at plate level upon final rinse cycle. No chlorine test strips. Operator primed unit and achieve 50 ppm chlorine at the plate level.
Observation #2: Stacked plates for customers were dirty with stuck on debris, including egg shell.
Corrective Action(s):
Corrective Action #1: Obtain chlorine test strips. Record chlorine concentration at dishwasher daily. [Date to be corrected by: December 14, 2018]
Corrective Action #2: Clean and sanitize plates and utensils thoroughly. Staff must pre-scrape dishes before placing into dishwasher [Date to be corrected by: immediately]

Observation:
Observation #1: Display cooler holding potentially hazardous food at 10.9C. Display cooler must operate at </= 4C. No temperature records kept for coolers and freezers.
Observation #2: Low-temperature chemical dishwasher has 0 ppm chlorine at plate level upon final rinse cycle. Dishwasher appears not to have been primed correctly - achieved 50 ppm after priming. Dishwasher must achieve 50-100 ppm chlorine at final rinse cycle. No chlorine test strips on site. Repeat violation.
Corrective Action(s):
Corrective Action #1: Operator removed dust on intake fans and turned off cooler to allow it to defrost. Do not use cooler until it can achieve </= 4C. Begin recording temperatures at coolers and freezers daily. [Date to be corrected by: December 14, 2018]
Corrective Action #2: Call technician for dishwasher maintenance. Obtain chlorine test strips and begin recording chlorine concentration at dishwasher daily. [Date to be corrected by: December 14, 2018]
