Observation (CORRECTED DURING INSPECTION): Quats sanitizer solution was too strong (above 400 ppm).
Corrective Action(s): Reviewed mixing procedures with staff. Ensure to follow instructions on label to mix properly for a concentration of 200 ppm. For "Sani Stuff", mix 2 ml of Sani Stuff with 1 L of water.
Staff prepared new solution at time of inspection. 200 ppm detected.

401 - Adequate handwashing stations not available for employees [s. 21(4)]
Observation (CORRECTED DURING INSPECTION): 1) One hand washing sink was missing paper towels.
2) Another hand washing sink was storing washed lettuce.
Corrective Action(s): 1) Ensure all hand washing sinks are properly supplied with hot and cold running water, liquid soap and paper towels in dispensers.
2) Designated hand washing sinks must be used for hand washing only. Do not use to wash food or to store any food, equipment, or utensils.
Corrected at time of inspection.

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation: Old mouse droppings were found in corners of back storage area.
Corrective Action(s): Remove droppings. Disinfect affected areas with 1000 ppm bleach solution. Ensure all items are stored 6 inches above the floor to facilitate monitoring and cleaning. Staff stated there was a mouse issue in the past, however no recent activity has been noted.
Correct by: Immediately.

Observation: Staff onsite at time of inspection did not have FoodSafe level 1 or equivalent.
Corrective Action(s): At all times of operation, there must be at least one employee onsite who has FoodSafe Level 1 or equivalent.
Ensure more staff register for and complete FoodSafe course if needed.

Comments

- Routine inspection conducted.
- Other hand sinks were properly supplied with hot/cold running water, liquid soap, and paper towels (see violation code 401 above).
- Quats available for sanitizing food-contact surfaces. Ensure staff are following instructions on label for proper mixing (see violation code 302 above).
- High-temperature dishwasher reached 74C at the dish surface during final rinse. Good, minimum of 71C at the dish surface is required.
- Both prep coolers measured 4C or colder.
- Upright freezer and chest freezer measured -18C or colder.
- Temperature log available and up-to-date. Accurate thermometers available.
- Hot-held food items measured above 60C.
- Food storage practices satisfactory. Good separation of raw and ready-to-eat items. Food stored properly covered and protected from contamination.
- Chicken was thawing in cooler - good.
- Food prep sink and two-compartment sink maintained in sanitary conditions.
- Some boxes and other items in back storage area to be stored off the floor. Ensure to monitor daily for any new pest activity (see violation code 306 above).
- Equipment and utensils maintained in sanitary conditions.
- Ensure FoodSafe requirements are met at all times (see violation code 502 above).
