Observation:
Potato slicer (used to slice/chop green peppers and onions) observed to be unsanitary at the time of inspection. Accumulation of dried vegetables observed on and in-between the blades.
Corrective Action(s):
Immediately clean and sanitize the slicer. Ensure to deeply clean and sanitize all the spaces in the blades.

Observation:
- Several food containers in prep/makeline cooler did not have a lid/cover.
- Open bag of flour observed to be stored in dry storage area.
Corrective Action(s):
- Cover all food with a foodgrade lid/cover to protect food from contamination.
- Transfer leftover flour that is not used to a food grade container with a lid.

Observation:
General sanitation of facility needs improvement, especially in the following areas:
- Outside of paper towel dispenser for hand sink near pizza oven.
- Behind pizza dough stretching/flattening machine beside hand sink near pizza oven.
- Inside all cupboards and shelving units.
- Shelves of prep/makeline cooler.
- Inside stand-up freezer.
- Dough mixer.
Corrective Action(s):
Clean all the areas listed above.

Comments

Routine Inspection:
- Hand washing stations (by pizza oven and at 2-compartment sink) fully equipped with liquid soap, paper towels and hot/cold running water.
- All temperatures met health requirements:
Walk-in cooler, prep/make-line cooler and front beverages cooler maintained at or below 4 degrees Celsius.
Stand-up and chest freezers maintained at or below -18 degrees Celsius.
Hot holding maintained above 60 degrees Celsius.
- Thermometers present in refrigerator and hot holding units.
- Concentration of bleach sanitizer in spray bottle = 200 ppm.
- 2-compartment sink used for manual warewashing.
- Two trays of chicken wings were observed to be cooling at room temperature. Employee informed that the wings were cooked in the morning and placed on the counter to cool by 12pm. At the time of inspection, the internal temperature of the wings were measured at 19.9 degrees Celsius at 1:50pm. The employee proceeded to transfer the cooked and cooled chicken wings into the walk-in cooler to complete the cooling process at 4 degrees Celsius.
- Staff washroom hand sink fully equipped with liquid soap, paper towels and hot/cold running water.

NOTE:
- Liquid soap at hand washing station near the pizza oven is running low. Be sure to re-fill the dispenser today.
