Observation (CORRECTED DURING INSPECTION): Two large pots of cooked onions found on stove, left at 45C and intended for further use approximately 3-4 hours away.
Corrective Action(s): Processed/ cooked/ cut foods must not be held above 4C or below 60C as pathogens can survive & grow.
Onions were dispensed into 6 inch deep containers and moved to the walk in cooler.

302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation (CORRECTED DURING INSPECTION): 1) Stand mixer found with dough hook in poor sanitary condition.
2) 2 bins of utensils found in varying states of sanitation. Some visibly dirty with dried on food debris.
Corrective Action(s): You must ALWAYS wash, rinse, and sanitize your food equipment after use. No exceptions.
Rewash ALL utensils and their bins through your washing machine.

Observation: 1) Onion gravy found in a chemical detergent container.
- never use chemical containers for food storage! Foods can become contaminated and extremely dangerous to consume.
2) A number of scoops were found in dry product bins. Many scoops without handles
- use only proper scoops with handles, and always store outside of food product
3) Garbage bins in use as product storage. No bags in use to prevent food from touching the industrial plastic
- use bags to store product inside bins, or use only food grade bins
4) Rodent poison bait traps found in food storage room
- don't use poison baits in food areas.
