Routine inspection conducted:
- Handsink in food prep area and washrooms are supplied with hot and cold running water, liquid soap and paper towel
- All coolers - sushi prep cooler, sushi bar cooler, drinks cooler, small undercounter cooler upright storage cooler - are all measured at less than 4C
- Storage freezer and kimchi freezer are measured at less than -18C
- Hot holding unit is measured at greater than 60C
- Sushi rice measured at pH 4.0
- High temperature dishwasher measured at 75C during final rinse cycle at dish level
- Food contact surface sanitizer (bleach solution) is available in bucket, concentration is measured at 200ppm chlorine solution
- Food storage practices are satisfactory
- No evidence of pest activity is noted at the time of inspection
- FOODSAFE is verified
- General sanitation is satisfactroy
