Routine check.
Coolers (3) are at 4 C or colder. Cooler for whole produce ONLY is at 6 C.
No hot holding during inspection.
Cool foods quickly - 60 - 20 C in 2 hours or less and 20 - 4 C in 4 hours or less. Show this on your food safety plan (and keep food safety plans on site so they can be reviewed).
Thawing of food is being done in the large cooler (bottom shelf).
Clean and sanitize sink and wash hands before washing produce. Operator advises produce is dried with paper towels after washing.
Hand washing stations - keep the paper towels closer to the hand washing sink.
Dishwasher has a final hot water sanitizing rinse (71 C/ 160 F) temperature was reached.
Chlorine is used to sanitize food contact surfaces and wiping cloths (use 1 tsp bleach per liter of water).
Sanitation plan - keep this on site. Include a cleaning schedule that is followed.
Operator has updated his Food Safe Level 1 in July 2018.
