Observation (CORRECTED DURING INSPECTION): Sanitizer dispensing unit at 3 compartment sink was recorded at 0ppm QUATS. Sanitizer bottles were measured at 0ppm QUATS. Upon investigation, QUATS sanitizer bag connected to the dispensing unit was found empty. Staff connected the new sanitizer bag. Dispensing unit was able to dispense 200ppm QUATS. Staff changed the QUATS sanitizer solution in sanitizer bottles as well.
Corrective Action(s): Regularly check the dispensing unit to ensure that 200ppm QUATS sanitizer solution is dispensed to adequately clean and sanitize food contact surfaces.

Comments

Routine inspection conducted at the food facility and the following observations were made:

- Temperature of coolers were maintained at 4C or less.
- Temperature of freezers at -18C or less.
- Ambient temperature of meat processing room at 7C.
- Hand wash station available and had adequate supply of hot and cold running water, liquid soap and single use paper towels.
- 3 compartment sink available for dishwashing. See violation above.
- Cleaning and sanitizing protocols of meat grinder and band saw discussed and found satisfactory.
- General sanitation of the facility was satisfactory.
- No signs of pest activity observed during inspection.
