Observation (CORRECTED DURING INSPECTION): A jug of milk was stored at 10°C in beer cooler.
Corrective Action(s): Move jug of milk to a working cooler at ≤ 4°C if it has been less than 4 hours. Otherwise, discard it. The beer cooler must be able to maintain ≤ 4°C if you want to store potentially hazardous foods in it (meat, dairy, chopped fruit and vegetables).

Observation (CORRECTED DURING INSPECTION): Quat sanitizer was not available at the cooking line. Two buckets of sanitizer at bar/servery area were at 50 ppm.
Corrective Action(s): Provide Quat sanitizer at 200 ppm in noted areas. Ensure these are refreshed regularly to maintain the concentration.

Corrective Action(s): Address sanitation issues noted in the other violations and consult your pest control company. Clean all areas of food debris, moisture, and sugary residues and sanitize with a 100-200 ppm bleach solution. This can be prepared by mixing 1/2 teaspoon unscented household bleach with 1L of water.

Observation (CORRECTED DURING INSPECTION): Back entrance was open at the time of inspection.

Observation: Accumulation of food debris observed in the following areas:
- Underneath, behind, and between appliances at the cooking line
- Interior and exterior of stand-up freezer at the cooking line
- Underneath prep tables at the back of the kitchen
- On and underneath shelving in the dry storage room
- Exterior of bulk food bins in the dry storage room
Corrective Action(s): Clean all noted areas. Ensure cleaning is done regularly. Food debris left out serves as a food source for pests.
