Handsink equipped with hot and cold running water, liquid soap and paper towel
Coolers operating at </=4 C. Temperature records maintained daily.
pH records maintained for kombucha products. Final pH between 2.5 - 4.2
Fermentation vessels (stainless steel) covered with clean, porous cloth
Cooling time after tea boiled less than 2 hours
Fermentation time longest is 10 days up to 14 days. Product pH tested before using it. Looking for pH around 3 not above 4.2
pH meter calibration done by operator/owner
SCOBY condition discarded based on visual inspection
Sanitizer: bleach spray at 100 ppm for sanitizing surfaces
