Observation: Wiping rags noted on counters.
Corrective Action(s): Wiping rags to be store in a bucket of sanitizer after wiping counter, do not leave them on counter, after wiping rinse and store them in a bucket of sanitizer away from food.

Observation: No hot water at hand washing sink, hot water been closed off due to leak for 3 weeks.
Corrective Action(s): Repair it , hand wash sink must have hot and cold running water at all time so food handler can wash their hands properly.

Observation: No-one with FS training was available at time of visit.
Corrective Action(s): There must be at least one FS trained staff on duty at each food prep/handling area ( back and front). Register enough staff to satisfy this requirement.

Comments

General
- Temp all coolers + freezers are satisfactory
- Paper towels liquid soap are provided at handwashing sink
- Bleach Solution >100 ppm.
- Hot holding temp > 60 oC

*Log sheet (temp and sanitizer concentration) not maintained: Record monitoring data ( temp of coolers and hot holding at least twice, sanitizer concentration for third sink, spray bottle and buckets once daily) and keep the log sheet on site.
* Ensure to follow proper manual dishwashing steps : wash, rinse, sanitize, air dry
* Ensure to rotate vegi prep and meat prep to prevent cross contamination (first vegi then meat)
* Ensure to follow cooling procedure as noted in the approved FSP
