Routine inspection conducted at this date. - Hand washing stations maintained. Staff observed washing hands frequently and between tasks. - All cooling units measured at or below 4C. Freezers measured at or below -18C. Temperature monitoring log for all cooling and freezer units as well as dishwasher are to be maintained. - Both Dish washers registered at 71 C or hotter in the final rinse water. - Cutlery noted double washed, carefully dried and wrapped with clean napkins. - Bleach water with 100ppm chlorine residue available to sanitize cutting boards and counters. - Main large cutting board is to be sanitized between tasks. - General sanitation is overall good. - Ice maker noted clean and ice scoop stored in a sanitary container. Ice maker machine still have original cover wrap over stainless steel facing of the machine. Please remove this wrap for ease of cleaning. - Kitchen is well lit. - Grill hood noted very clean and grill back splashes maintained. - Sanitizer available for customer area. - Customer washrooms fully supplied and available for use. No sign of pest activity noted at this date.
