General sanitation is satisfactory
Hot and cold running water was available.
Liquid soap and paper towel present at handwashing station is pizza prep area, at sink in kitchen and in staff washroom
Large line cooler was 3C. Small line cooler was 4C
Small chest freezer was -13C Large chest freezer was -11C
Walk-in cooler was at 4C
Left upright freezer was at -9C
Right upright freezer was at -4C *Monitor this freezer to ensure it maintains foods in a frozen condition. Ensure freezer door is closing securely. Door seal may need to be replaced if it is not closing properly.
Ensure temperatures are being monitored to ensure food is kept at safe temperatures
Hot holding of chilli was 70C
Final rinse of high temperature dishwasher was 73C as measured with peak holding thermometer which is adequate for sanitizing. Ensure rinse temperature on dishwasher is monitored. Temperature on display should be 82C on external display during rinse cycle.
Cloths stored in bleach sanitizer (100ppm chlorine) and used to sanitize food contact surfaces.
