Observation (CORRECTED DURING INSPECTION):
Internal food product temperatures for following items in inserts at the left preparation cooler:
- Shredded cheese 11 degrees C.
- Ham, salami, and pepperoni 12 degrees C.
- Cooked tandoori chicken 13 degrees C.
- Bacon crumble 12 degrees C.

Cooked pasta in the under the counter section at 11 degrees C.

Internal food product temperatures of items in the under counter 2 door cooler ~ 7-8 degrees C. Ambient air temperature ~ 8 degrees C.
Corrective Action(s): Items noted above in the left prepration cooler were discarded. Ensure all cold potentially hazardous foods are stored at or below 4 degrees C. All cold potentially hazardous items in the under the counter 2 door cooler were relocated into the walk in in cooler (2 degrees C).

Observation (CORRECTED DURING INSPECTION): Knives stored in spacing between the right preparation cooler with inserts and the under the counter 2 door cooler.
Corrective Action(s): Store all knives and any other utensils in a sanitary manner at all times.

302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation (CORRECTED DURING INSPECTION): At the time of inspection 3 compartment sink not setup for manual warewashing. Both the wash and rinse sink observed filled with dirty dishes/utensils.
Corrective Action(s): Manual warewashing follows these steps:
1. wash
2. rinse
3. sanitize
4. air dry

Instructed staff on proper warewashing procedures. Sanitize sink filled with 100ppm.

Observation (CORRECTED DURING INSPECTION): Front designated hand sink not provided with liquid soap. Bar soap placed inside a styrofoam cup for staff to use when washing hands.
Corrective Action(s): Ensure this designated hand sink is provided with liquid soap and paper towels at all times.

Observation:
Scoops and other dispensing utensils observed stored directly in dry product.
To save space at the back recycle bin with wheels observed stored on top of large tub used to store flour.
Corrective Action(s):
Store scoops and other dispensing utensils outside of dry product and in a sanitary manner to protect food from contamination. Correct immediately.
Clean and sanitize the exterior of the large tub used to store flour. Do not store waste bins on top or next to food product containers. Correct immediately.

Observation:
Left preparation cooler inserts stored above 4 degrees C. Lower section ambient air temperatures ~10 degrees C.
Under the counter 2 door cooler ambient air temperature ~ 8 degrees C.
Corrective Action(s): Service both coolers and ensure they are capable of maintaining 4 degrees C or less. Do not use until serviced. Correct immediately.

Observation: Only staff on duty did not have FOOSAFE level 1.
Corrective Action(s): Ensure in the absence of the operator at least one staff on duty has FOODSAFE level 1 or equivlaent. Send addtional staff to take course. Correct by August 31, 2021.
