RE: Outstanding permit fee
- received the payment ( cheque #1993 )
Met with owner and discussed the following:
- they are not providing serving utensils, but they di serve the food during the events ( hot holding units, transportation of the food, no left over food after the event )
- open from May to October and some weeks in December
- High temp dishwasher reached 71C at the plate surfaces ( also have a low temp dishwasher but not in use for sanitation of the dishes/large pots ) - if in use in future ensure to have a chlorine residual at the final rinse
- keep you daily temp logs ( will mail more information )
