Observation: Low temperature dishwasher not in good working order as 0ppm of chlorine was achieved.
Corrective Action(s): Repair the dishwasher unit. All items need to be washed, rinsed, and sanitized in accordance to the 3-compartment sink method.

Routine inspection conducted and the following were noted:
No food production or processing at the time of inspection.
All cooler units at 4C.
3 compartment sink and 2-compartment prep sink satisfactory.
hand washing station available.
Food items stored at least 6 inches off the ground.

Note:
operator has not started the hot food program. Hot holding unit noted at the time of inspection, but no hot food items were served. As a reminder, operator needs to apply for health approval prior to starting a hot food section. An updated floor plan and food safety plan must be submitted to the health department for review.
