- Operators are processing a variety of pastries - croissants (butter/chocolate/almond/almond & chocolate/cinnamon twist), danishes (lemon & blueberry/pear & almond), torsades (custard & choc chip). Products are sold at farmers marketS. Operator may begin sell/supply product to other places as approval has been granted under the Food Premises Regulation.
- Custard being used is pre-made (Puratos) and supplied by Snow Cap. Documentation was provided prior to initial approval to indicate it is shelf stable
- Egg wash used is a pasteurized egg product.
- Assigned to station #10. Full time time contract/agreement in place (40 hrs/week). Operating 11pm to 9am.
- Station, equipment and storage areas maintained in a sanitary condition.
- Food storage well organized and food products protected from contamination.
- Handsink accessible to station supplied with hot and cold water, liquid soap and paper towel.
- Walk-in cooler was at 4C
- Walk-in freezer was at -18C
- Quats sanitizer present at station. Concentration measured 200ppm.
- High temperature dishwasher operational. Final rinse was 78.6C at dish surface.
* Operator may add additional varieties of pastries which may include savoury items. Operator to provide list. Products to be reviewed once list submitted. Testing may be required if potentially hazardous products are being added (ie. cheeses)
