306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation:
1) The ceiling tiles and air diffusers have accumulated dust on them. The dust could fall into food and contaminate it.
2) The exhaust canopy and filters have accumulated dust and grease on them. Dust could fall into food and the grease poses a fire hazard and will attract pests. As per the service sticker, the canopy and filters should of been cleaned in October 2023.
Corrective Action(s):
1) Wash the ceiling tiles to remove the dust, and/or replace the ceiling tiles with new ones if you are unable to remove the dust. Increase the frequency the ceiling tiles are cleaned on a regular basis.

2) Immediately have a professional company clean and service the exhaust canopy and filters to remove grease and dust.

Comments

A routine inspection was completed:
- Coolers 4C or colder; freezers -21C or colder; thermometer present.
- High temperature dishwasher had a rinse cycle temperature of 72.0C at the plate's surface, as per max/min thermometer.
- Hand sinks stocked with liquid soap, paper towels, and running hot and cold water.
- All foods stored in food grade containers; covered; labelled; date coded; foods stored in groups with raw proteins below RTE foods; and all foods stored 6" off the floor on shelves, racks, and platforms.
- No expired foods in use or for sale. FIFO rules being followed.
- Valid, FoodSafe certified staff present and/or they possess a recognized equivalent certificate.
- General sanitation level is good. Improvement seen in hard to reach areas, and detailed cleaning of surfaces are being done.
- Minimal signs of rodent droppings found on floor along the base of walls, behind equipment and storage racks.
- Professional pest company contracted to monitor and eliminate pests. Glue boards and catch-all-traps found in premises. Blocking of holes and openings have been done with tightly packed steel wool. Increased cleaning frequency of hard to reach areas and detailed cleaning being done.
- Some Quats sanitizer in spray bottles had 200ppm, however some had 0ppm. Dispenser visually does not appear it may be mixing the correct concentration at all times. New Quats sanitizer solution was placed in spray bottles at time of inspection.
- All surfaces are in good working order.
- Valid health permit and decal posted.

***Have Ecolab service the chemical dispensing unit to ensure it is dispensing the Quats sanitizer at the correct concentration at all times.**
