Ceiling panels and light covers have accumulation of dust and grease. Chef informed that they are in the process of cleaning a few every day.

Continue cleaning the panels and light covers. Ensure to include cleaning ceiling panels and light covers into your sanitation plan.

Routine Inspection:
All hand washing stations fully equipped with liquid soap, paper towels and hot/cold running water.
All temperatures met health requirements:
- Coolers maintained at 4C/40F.
- Freezers maintained at -18C/0F.
- Hot holding maintained above 60C/140F.
General food storage practices good:
- Food covered and protected from contamination.
- Food stored at least off the floor.
- Prepped food labeled in coolers.
- Dry storage organized.
QUAT sanitizer = 200 ppm.
High temperature dishwasher sanitizing with >71 degrees Celsius at dish level for final rinse cycle.
Ice machine clean. Ice scoop stored on top of ice machine.
No signs of pest activity at the time of inspection.
